Miso Brussels Sprout Salad

Ingredients
  

  • 10 Oz Brussels Sprouts
  • 1 ½ Tbsp White Miso Paste
  • 1 Tbsp Brown Sugar
  • 1 Tbsp Dijon Mustard
  • 3 Tbsp Rice Vinegar
  • 1 Egg Yolk
  • ¼ Cup Avocado Oil Sub any neutral oil
  • 2 Tbsp Mint Leaves Torn

  • Food Processor Optional

Method
 

  1. Trim stems off of brussels sprouts and add to a food processor. Add mint leaves. Pulse until finely chopped.
    Alternatively, use store bought shaved Brussels sprouts or hand chop.
  2. Whisk miso, dijon mustard, brown sugar, rice vinegar, egg yolk, and avocado oil to a bowl. Whisk until everything is well combined and smooth.
  3. Toss miso dressing with shaved brussels sprouts.
