Apple Cider Muffins
- Preheat oven to 350 degrees Fahrenheit. Line a cupcake tray with liners.
- In a mixing bowl, cream the butter and sugar. Add in one egg at a time and continue mixing until the color is pale. Slowly mix in the apple cider and vanilla extract. Fold the wet ingredients into the dry ingredients and mix until combined.
- Pour the batter evenly into the muffin tray.
- Bake for 15 minutes.
Brown Butter Crumble
- While the cupcakes are baking, begin making the crumble. Start by browning the butter in a small sauce pan over medium heat. Add bourbon if using. Remove from heat.
- Mix the dry ingredients in a separate bowl then pour the cooled brown butter over. Use your fingers to combine the ingredients into a crumble consistency.
- Remove the muffins from the over after 15 minutes. Add as much crumble as desired to each muffin. Then place back in the oven to finish baking for 5 minutes.
