Preheat oven to 350 degrees Fahrenheit. Line a cupcake tray with liners.
In a mixing bowl, cream the butter and sugar. Add in one egg at a time and continue mixing until the color is pale. Slowly mix in the apple cider and vanilla extract. Fold the wet ingredients into the dry ingredients and mix until combined.
Pour the batter evenly into the muffin tray.
Bake for 15 minutes.
Brown Butter Crumble
While the cupcakes are baking, begin making the crumble. Start by browning the butter in a small sauce pan over medium heat. Add bourbon if using. Remove from heat.
Mix the dry ingredients in a separate bowl then pour the cooled brown butter over. Use your fingers to combine the ingredients into a crumble consistency.
Remove the muffins from the over after 15 minutes. Add as much crumble as desired to each muffin. Then place back in the oven to finish baking for 5 minutes.
