    Gooey Pumpkin S’mores Bars

    Still too hot outside to enjoy fall flavors? think again with these Gooey Pumpkins S’mores Bars!

    There’s something undeniably comforting about warm, earthy flavors as summer comes to an end. One flavor that stands out as a quintessential fall staple is pumpkin. From pies to lattes, the versatile pumpkin adds a cozy, autumnal touch to our favorite dishes.

    However it can be hard to enjoy fall flavors when it is still above 85 degrees outside! That brings us to Pumpkin S’mores Bars! The perfect combination of summer and fall flavors.

    Ingredients

    This recipe is made with only pantry stable ingredients, so chances are you have everything you need already!

    Steps to make Pumpkin Smore’s bars

    1. Graham Cracker Crust – This step is super easy. All you need to do is blitz graham crackers in a food process or blender. Add in melted butter, sugar, and cinnamon, and then you have a delicious crust to hold the smore’s bar together. If you do not have a food processor or blender, you can also buy graham cracker crumbs instead of full sheets.
    2. Pumpkin Layer – This layer is equally as easy to make. All you need to do is whisk pumpkin, sugar, cream, spices, eggs, and chocolate chips until smooth. This layer does take a little while to bake, so be sure to leave sufficient time for that.
    3. Marshmallow layer – This part cooks quick so pay close attention once you put it in the oven!

    Adding the marshmallow layer is what really brings this whole treat together. Look how delicious the golden brown marshmallows look! Be sure to watch the oven closely once you put these in because marshmallows can burn quickly!

    Other Fall treats

    Ingredients
      

    Graham Cracker Crust
    • 12 Graham Cracker Sheets
    • 1 Tbsp Cinnamon
    • 2 Tbsp Granulated Sugar
    • 6 Tbsp Butter Melted
    Pumpkin Filling
    • 15 Oz Pumpkin Puree 1 can
    • ¼ Cup Heavy Cream Substitute Half and Half
    • 2 Eggs
    • ¾ Cups White Sugar
    • 1 Tbsp Pumpkin Pie Spice
    • ¼ – ½ Cups Chocolate Chips
    Marshmallow Layer
    • 15 Marshmallows Cut in Half

    Equipment

    • 8×8 Cooking Dish

    Method
     

    Graham Cracker Crust
    1. Preheat oven to 350 degrees Fahrenheit
    2. Make graham cracker layer by blitzing graham crackers, cinnamon, sugar, and melted butter in a food processor or blender until you get a sand-like texture
    3. Pack the crust into an 8×8 inch pan and par bake for 10 minutes at 350 degrees Fahrenheit.
    4. Remove from oven and let cool for at least 10 minutes
    Pumpkin Layer
    1. Whisk pumpkin puree, heavy cream, eggs, sugar, pumpkin pie spice, and chocolate chips. Pour into cooled Crust.
    2. Bake for 1 hour and 20 minutes at 350 degrees Fahrenheit
    Marshmallow Layer
    1. Cut marshmallows in half. Lie onto of pumpkins layer evenly. Broil for 1-2 minutes until golden brown.
    2. Let cool completely before cutting.
