Stone Fruit Caprese Salad

Ingredients
  

  • 3 Heirloom Tomatoes Sliced
  • 1 Cup Cherry Tomatoes or Sun Gold Tomatoes cut in half
  • 2 Peaches Sliced
  • 1 Nectarine Sliced
  • 10 Oz Mozzarella substitute burrata
  • ¼ Cup Fresh Basil
  • 3 Tbsp Rose Wine Vinegar substitute Champaign Vinegar
  • Freshly Cracked Black Pepper
  • Flakey Sea Salt

Additional Toppings

  • ¼ Red Onion thinly sliced

Instructions
 

  • Thinly slice the heirloom tomatoes and cut the cherry tomatoes in half. Salt generously to help draw out the water. Let sit for 5 minutes the dab with a clean paper towel.
  • Thinly slice the peaches, nectarines, and red onion. Chop the basil.
  • Arrange the tomatoes, peaches, nectarines, red onion, and mozzarella on a large tray or individual dishes. Sprinkle the chopped basil over. Drizzle the rose wine vinegar. Season with black pepper and salt.
