Thinly slice the heirloom tomatoes and cut the cherry tomatoes in half. Salt generously to help draw out the water. Let sit for 5 minutes the dab with a clean paper towel.
Thinly slice the peaches, nectarines, and red onion. Chop the basil.
Arrange the tomatoes, peaches, nectarines, red onion, and mozzarella on a large tray or individual dishes. Sprinkle the chopped basil over. Drizzle the rose wine vinegar. Season with black pepper and salt.
