    Mediterranean Cauliflower

    Take your vegetable game to the next level with my Mediterranean Cauliflower

    This dish comes together in 25 minutes and is loaded with flavor from all the herbs. It is the perfect side to complement any Mediterranean dish, and the yogurt sauce doubles as a great, non-traditional addition to a mezze platter! The sauce can also be made vegan by switching out the dairy-base yogurt.

    Ingredients

    • 1 Head Cauliflower

    • ¼ Cup Pine Nuts

    • ¼ Cup Sherry Vinegar

    • 2 Tbs Olive Oil

    • 1 Tbs Lime Juice

    • ¼ Tsp Lime Zest

    • ⅓ Cup Basil, Chopped

    • ⅓ Cup Cilantro, Chopped

    • ⅓ Cup Mint, Chopped

    • 2 Tbs Dill Fronds, Chopped

    • Yogurt Sauce
    • ⅔ Cup Plain Greek Yogurt (sub coconut for vegan)

    • 1 Tsp Honey

    • 1 Tsp Sumac

    Directions

    • In a large cast iron skillet, toast the pine nuts over medium heat until golden brown. Remove from pan and set aside.
    • Add olive oil to the skillet and add the cauliflower, cut into bite-size pieces. Cook on medium high for 2 minutes. Slowly pour in the sherry vinegar, taking extra care as the pan is hot and it may steam a bit. Stir occasionally until the cauliflower is golden brown and tender. About 10 minutes depending on how full your skillet is. I suggest using this time to make the yogurt sauce.
    • To make the yogurt sauce, stir together the greek yogurt, sumac and honey. If you chopped up too many herbs, you can add some to the sauce for an extra kick.
    • Stir in the lime juice, zest and ⅔ of each herb. I like to keep some herbs aside to garnish at the end. Finally stir in the pine nuts, and any other extras such as cranberries or pomegranate seeds.
    • To serve, place the cauliflower in a big bowl with a big dollop of the yogurt sauce on top. Add any left over herbs and enjoy!

      This blog is absolutely amazing! The Mediterranean Cauliflower is some of the best cauliflower I have ever tasted!! The recipes are so friendly for all cooking levels and bring such great taste to the dinner table! I love her passion for eating local and tasty flavors.
