    In states with less favorable growing conditions, alternative cherry tomato varieties may be preferred.     Caramelized Onion and Sun Gold Tomato Pasta

    Ingredients Method

    Ingredients
      

    • 4 Cups Sun Gold Tomatoes
    • 4 Garlic Cloves
    • ½ Cup Ricotta light or full fat
    • ¼ Cup Pine Nuts
    • 1 Tsp Red Pepper Flakes optional
    • 1 Tbsp Basil Chopped
    • 8 oz Pasta
    Caramelized Onions
    • 2 Yellow Onions
    • 2 Tbsp Butter
    • ½ Cup White Wine Optional

    Method
     

    Caramelized Onions
    1. Prep the onions by peeling them and slicing them very thin.
    2. Melt butter in a heavy bottom pan then add the onions. Toss so that they are evenly coated in butter. Cook the onions slowly over medium-low heat for 40 minutes to an hour.
    3. If desired, add ¼ cup of white wine or water to help the caramelization process along.
    Cook Pasta
    1. Cook pasta according to the package's instructions.
    Caramelized Onion Pasta Sauce
    1. Once the onions are caramelized, add the tomatoes. Let the tomatoes cook, stirring occasionally, until they are soft and ready to burst by being smashed gently with the back of a spoon. Roughly 15 minutes.
    2. Add the ricotta cheese, red pepper flakes, salt, and pepper. Stir to combine. Adjust seasoning to taste .
    3. Add cooked pasta into the caramelized onion and tomato sauce. Stir to combine.
    4. Once the pasta is served on plates, garnish with toasted pine nuts and fresh basil.
