    Fruity Pebble Truffles

    My Fruity Pebble Truffles are a fun twist on what’s probably the greatest breakfast cereal of all time. They are so delicious and will be loved by everyone from kids to adults reminiscing on an old breakfast favorite!

    Truffles make a beautiful addition to dessert tables for parties! There are always so many creative ways to decorate them. I think these fruity pebbles truffles would be adorable with unicorn horn toppers for a kids party! There is so much room to get creative with these. However, they also look stunning kept simple with a chocolate drizzle and extra fruity pebble flakes like above!

    They’re also a piece of cake to make! Pro tip: buy a pre-made angel food cake from your grocery store’s bakery! Making these with a pre-made cake means less prep/baking time and more importantly less dishes!

    Ingredients

    • 1 Angel Food Cake

    • 2 Cups Fruity Pebbles Cereal

    • ½ Cup Ricotta

    • 12 oz White Chocolate Chips or Candy Melts

    • 1 Tbs Canola or Coconut Oil

    Directions

    • Add the fruity pebbles to a the largest bowl in a food processor and blend until they turn into a fine powder. Add the angel food cake and ricotta to the food processor and blend until well combined and a ball forms.
    • Using your hands or a cookie scoop, form 1 inch size balls and place on a baking tray. Freeze for 1 hour.
    • Melt the white chocolate in a microwave (20 second increments) or in a double boiler. I prefer adding a table spoon of fat such as coconut oil or canola oil to thin out the white chocolate and make it easier for dipping.
    • Remove the truffles from the freezer and coat them in white chocolate. Immediately sprinkle crushed fruity pebbles on top while the chocolate is still melted. Alternatively, you can pop them back in the freezer for 10 minutes and drizzle on more melted chocolate after.
