    Ingredients
      

    • 1 Fennel Bulb reserve the fronds to garnish
    • 2 Cups Arugula
    • 3 Oz Shaved Parmesan
    • 1 Green Apple Sliced Thinly
    • 1 Lemon Juiced
    • ¼ Cup Extra Virgin Olive Oil
    • 1 Tsp Dijon Mustard
    • Salt and Pepper

    Equipment

    • 1 Mandolin

    Method
     

    Dressing
    1. Mix together the lemon juice, extra virgin olive oil, dijon mustard, salt and pepper. Stir until well combined. Set aside.
    Shaved Fennel Salad
    1. Use a mandolin for best results. Cut the core out of the fennel bulb and shave the fennel into ⅛ inch slices. Add to a bowl along with arugula, sliced apple, and shaved parmesan.
    2. Add the dressing to the salad. Toss to combine. Add extra fresh cracked black pepper and extra fennel fronds to garnish.
