    Blackberry Brie Pinwheel: The Perfect Appetizer for all your holiday party needs

    Take the stress out of cooking for a crowd by whipping up these easy blackberry brie pinwheels. Sweet berries and creamy brie cheese all wrapped in a flaky puff pastry, there is not one party goer who won’t be wanting seconds!

    Ingredients

    This recipe is so simple to make! All you need is puff pastry dough, fresh or frozen blackberries, brie, honey, fresh rosemary, an egg, and raw sugar to sprinkle.

    Blackberry Rosemary infused Honey

    This simple mixture is part of the filling for these pinwheels. However, it’s so delicious, you’ll want to repurpose any excess for cocktails or even to spread across your morning toast!

    Infused honey is super easy to make. All you need is honey and your flavorings, which here, include blackberries and chopped rosemary. Bring all the ingredients to a simmer then muddle the blackberries with a muddler or a wooden spoon. Be gentle when you muddle, you want to smash the blackberries enough so this mixture can roll into pinwheels easily. But not too smashed where they are essentially pureed.

    Remove from heat once your are done muddling and let cool for 5 minutes

    Assembling Blackberry Brie Pinwheels

    Lay out the puff pastry dough on a clean work surface and poor the blackberry, honey mixture over. Be sure not to get too close to the edges to avoid spilling. Next, remove the rind of the brie and chop into small pieces.

    My trick for cutting the brie is to freeze it for at least 30 minutes first. Otherwise the brie is too soft and will stick to the knife which won’t allow you to get a clean cut.

    Cutting the blackberry brie pinwheels

    Roll the puff pastry dough as tight as possible, taking care to not let the blackberries or brie chunks fall out. Once the pastry is rolled, I like to stick it in the freezer for 15-20 minutes to help with the cutting.

    To ensure even pinwheels, I prefer to make my first cut directly in the center of the rolled log and then work my way out to the sides. Aim to cut your pinwheels ½ inch thick which will yield roughly 10-12 pinwheels.

    Be sure to whip the knife after each cut to avoid coloring the pastry dough with the red-tinted honey.

    • 1 Sheet Frozen Puff Pastry
    • ½ Cup Blackberries Fresh or frozen and thawed
    • ¼ Cup Honey
    • 1 Sprig Rosemary Chopped
    • 6 Oz Brie Remove Rind and cut into chunks
    • 1 Egg Beaten
    • Rosemary or Raw Sugar Optional garnish

    Equipment

    • 1 Baking Sheet

    Method
     

    Prep Work
    1. Let puff pastry thaw and move brie to freezer for 30 minutes so it is easier to cut.

    1. Preheat oven to 375 degrees Fahrenheit
    2. Add honey, blackberries, and chopped rosemary to a small sauce pan and cook over medium heat. Once the honey begins to simmer, use a muddler or wooden spoon to gently smash the blackberries. You want the blackberries smashed just enough so they are not too bulky to roll. Once finished smashing, remove from heat and set aside.
    3. Roll out the puff pastry dough onto a clean works surface. pour the blackberry honey in the middle and spread to the corners. Careful to keep a clean boarder so that nothing leaks out.
    4. Remove the rind from the brie and cut into small chunks. Scatter the brie pieces evenly across the puff pastry dough. Carefully roll the puff pastry into a tight log. Be careful that no blackberries or brie fall out.
    5. Transfer to the freezer for 15 minutes so that the puff pastry is easier to cut into pinwheels.
    6. Remove from the freezer and cut into 10-12 even pinwheels. For even cuts, I like to make the first cut in the middle then work my way to the sides. Place the pinwheels on a lined baking tray and brush with the egg wash. Sprinkle raw sugar or chopped rosemary if desired.
    7. Bake for 15-18 minutes then remove from the oven and let cool completely. Add more raw sugar or chopped rosemary to garnish if desired. Transfer to a serving tray
